Pad Pak

The mister and I took our son to dinner at Sumittra Thai in downtown before his video game tournament that he and his friends were joining last Sunday. I have always loved their beef curry, but for the first time in my entire life, I ordered a vegetable dish at a restaurant. Ha!

I had a vegetable Pad Pak. It's a stir-fried mixed vegetable with brown sauce. It was really good. I ate the left over the following day for lunch. This was it.

I loved it so much that I tried it for dinner using the vegetables I had in my kitchen. I didn't get the taste yet like how I tasted it from Sumittra. But, the boys loved it.

The following day, I tried it again. Broccoli, carrots, mushroom and purple sweet potato. I expiremented with the seasoning, and I think I am almost there.

Hopefully, the next time I try making it I can really tell that it tasted like the Pad Pak I had in downtown. I'd definitely share it here. Or do you have an easy recipe for Pad Pak that you could share?

I usually cook mixed vegetable fries at home. Very interesting that you added purple sweet potatoes.
