How was your Christmas holiday?

Mine was okay. I can't tell you that it was great because the mister was sick, but I am happy to tell you that his knee doesn't need surgery. He will be required to go through physical theraphy which will start early next week.

A few days ago, I chatted with a friend. She said she got another diamong ring from her husband for Christmas. It was and has been on her wish list for three consecutive years already.

Her husband: You have two diamond rings already?!

Wife: But darling, it's a girl's bestfriend. Diamonds are!

So, that was what she got! A third ring with a big diamond at the middle. She introduced me to her newest best friend via video chat on Viber. Actually, I met her three best friends that night.

They were so sparkly that it hurts my eyes. I had to wear sunglasses while video chatting with her. Hehehehe.

I can't wait the next time we'll see each other. I will definitely try her new ring on. They're absolutely beautiful.

Today, I made plant based stew. Actually, it's caldereta, a Filipino dish which is normally cooked with goat's meat, liver spread or paste, and some vegetables. Beef can also substitute for goat meat. Back when I used to cook it with beef, I call it Bakareta. Baka is Filipino for cow or beef.

... and no. Calde or Caldereta does not mean goat or goat's meat. hehehehe. More about the dish here. 

This was a big hit for dinner. Russett potatoes, carrots, green peas, garbanzo beans, garlic, onion, roasted red pepper, no-salt added tomato sauce, red pepper flakes, sea salt, ground black pepper, and mushrooms. I served it with rice. Actually, it was so orgasmic even without the rice.



This dish is mister and boy approved.
