Pan de Queso

So I made bread late tonight because I only realized after dinner that we do not have anything with our café latte in the morning.

Jay's choice was Pan de Queso. It has been a long time since I baked some. This time, I filled them with generous slices of cheese.

The boy came down from his bedroom to the dining room when I took the freshly baked bread out of the oven. He waited for me to offer him a piece---a taste test.

I slathered the bread with spreadable butter and sprinkled it with sugar on top.

Both of them, the father and son, waited.

I handed them each a piece, and then I heard the boy say, "It's best when it's fresh. It's true if it rhymes."

On his second bite, he blurted out, "It's so good, Ma. It can make you cry."

PS I would like to apologize to Christian, the boy's brother from another mother, because I made these again when he's not here.

Hey! I'm Hungry!

I really want to eat something savory as my first meal today, but I do not have the luxury of time to cook. I need to report very early to work. I have some alterations to do, wash them, and hopefully be able to ship them as well before the post office closes at 5.

The mister aka my barista left so early today too. He didn't have time to make latte.

I do not have any other choice but eat the last piece of homemade ube ensaymada I made the other night. I am also having a hot cup of chocolate drink sprinkled with cinnamon on top to go with it.

Today is one of those days where I miss living in the Philippines. Growing up, my parents hired someone to cook for us. Hey! This is common to most households in my home country. And for last resort just in case it's the cook's day off, there are also a lot of food stalls also known as carinderia and street food vendors in every neighborhood.

In America, you cook and prepare what you eat or go hungry. Hehehehe I don't prefer the latter, so the last piece of homemade ensaymada will do for now.

Good morning!

PS. Fast food for breakfast is only preferred when we are on the road. Hehehehe.

Hello from my kitchen

I am back to making bread again after a long time. The mister asked me yesterday if we have cinnamon rolls to be paired with his morning coffee. I said we have none, and I have not been buying those kind. I get our rolls at Giant Eagle, but lately I have not been satisfied with their product. Too much frosting It's smothered in frosting that the sweetness on top drowns the taste of cinnamon. The middle part of the 6-rolls-in-a-pan sank. I realized from the low quality of cinnamon rolls I have been buying that their bread isn't made with love. So, I stopped patronizing.

I came across a recipe online the other week, and saved it in my email. Finally, it's time to try it. First try, I used my stand-up mixer. But I noticed right away that the dough looked off.

Me to the mister: 'yot, nganong nisuway man ko ug laing bread recipe oy nga sakto na man tong akoa sa una. Perfect na man to oy! (Why did I try this other bread recipe when mine is perfect already?!)

The Mister: Di ba lisud man na himuon? (Isn't that hard to make?)

Me: Dili oy! Kapila na bitaw ko gahimo sa una! (No, it's not! I made it many times in the past.)

I have several ebidensya.

So I mixed another batch still using the new recipe using my breadmaker. I didn't discard the first try. I let it rise.

Guess what? It was still a failure! The dough looked runny, and it didn't rise as much as I wanted it to.

So, I scrapped the cinnamon roll idea, and salvaged the two big lump of runny doughs into small buns topped with sugar. The rest that didn't fit in the pan, I made it into a loaf.

This morning, the mister woke me up with my coffee in his hand. He was already on his second roll when I joined him in the dining room. He said the bread tasted like monay.

...and he finished 6.
